Fried Rice with Scrambled Tofu



  • 1 cup uncooked rice
  • 200g scrambled tofu
  • ½ tsp turmeric
  • 2 tbsp nutritional yeast
  • Pinch of salt and pepper
  • 1 garlic clove, minced
  • 1 onion, diced
  • 1 cup frozen corn (or carrots)
  • 1 cup frozen peas
  • 1/2 cup roasted peanuts
  • Green onions for garnish
  • 2 tbsp nama shoyu (soy sauce)
  • 1 tbsp barbeque sauce
  • 1 tbsp tahini
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tbsp apple cider vinegar
  • 1 tbsp brown sugar
  • 2 tsp chilli sauce


  1. Cook rice according to package directions and set aside.
  2. Crumble tofu in a small bowl. Add in the turmeric, nutritional yeast, salt and pepper. Mix well and set aside.
  3. Heat the pan over medium heat. Add tsp oil or use water for cooking like I do.
  4. Add the diced onion and cook for few minutes, then add minced garlic and cook for a few more minutes.
  5. Add in the tofu mixture and cook for about 5-7 minutes, stirring often.
  6. Add in the corn, peas and peanuts. Cook on low heat about 5 more minutes.
  7. Whisk together soy, barbeque and chilli sauce, tahini,  onion and garlic powder, vinegar and sugar. Pour in the pan and stir untill everything is combined.
  8. Add rice and mix everything together very well, and cook until heated through, about 5 minutes.
  9. Serve, topped with a sprinkling of chopped green onions, if desired.
