Creamy Garlic Roasted Tomato Pasta

I just love or high-carb dinners. Rice and potatoes are our staples. Sometimes we need some change and pasta is the way to go. Who doesn’t love pasta. My daughter sure does and it used to be one of my favorite food too before going vegan. So today I made garlic tomato pasta and it was surprisingly good. Instead of high fat dairy cream I used rice cream. I think adding some coconut cream also next time to make it even more creamier. If you don’t have issues with soy, go ahead and use soy cream. You can most certainly enjoy creamy pasta even if you are vegan. And you can do it without feeling guilty after, it is even good for you. I just love my lifestyle, all the satisfaction of eating delicious food without an ounce of quilt, everything I put in my body are also good for my health, animals and environment. This is the way everyone should eat.

Ingredients:

  • 400g organic penne
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup sun-dried tomatoes without oil, chopped
  • 200ml rice cream 
  • dash of cane sugar
  • salt and pepper, to taste
  • 1 tsp dried parsley
  • bunch of fresh basil
  • 4 fresh tomatoes, chopped
 Instructions:
  1. Heat deep skillet over medium heat and saute garlic and onion in dash of water for 5 minutes until the onion begins to soften.
  2. Add tomatoes and sun-dried tomatoes. Saute for 5 minutes more, or until tomatoes are soft and water is almost gone.
  3. Add the rice cream and dried parsley.
  4. Season with salt and pepper, to taste. Add a dash on sugar to balance the sour tomatoes.
  5. Let the mixture bubble over medium-low heat until the sauce starts to thicken and reduce. If necessary add some corn/potato starch mixed with cold water to thicken some more.
  6. Meanwhile, bring a large pot full of water to boil to cook the penne. Cooking instruction on the package usually.
  7. Once the sauce has thickened to a nice creamy consistency – about 10-15 minutes – remove from heat and add the fresh basil leaves. Stir to just mix.
  8. Sprinkle some nutritional yeast on the penne for cheesy flavor.
  9. Toss the cooked pasta with the cream sauce and serve hot.
